Preheat oven to 350 degrees. Spray 1 large or 2 small loaf pans with cooking spray. In a medium bowl, combine flours, sugar, cinnamon, salt and baking soda. In a larger bowl, beat the egg whites at high speed for 1 minute. Beat in applesauce and buttermilk. Gradually add the flour mixture and beat until just combined. Stir in cranberries & walnuts, and orange peel, if using. Spread in loaf pan(s). Bake for 45 minutes (less for small loaf pans). Slice and serve.
