The thing I like best about these truffles are how adjustable the recipe is to personal tastes! I've added the ingredients I perfer to use, but you can also add things like vanilla or mint extracts, different kinds of cocoa powder, or even things like defatted peanut flour, or "Better'n Peanut Butter" for new tastes! Splenda or other sweetners should be added to suit your taste.

8oz. Fat Free Cream Cheese
2 1/2 T Cocoa Powder
1/8 to 1/4 C chopped Dark Chocolate

Here is how you make Practically Fat-Free Truffles:

First things first, be sure to remove your cream cheese from the fridge for 5 - 10 minutes before starting, to give it a little time to warm up. You can microwave it in a safe bowl to speed up the process if you wish, but be aware that the fat-free product 'melts' differently than regular cream cheese, and keep an eye on it in the nuker!If you are going to add your chocolate pieces (which are completely optional) now is the time to do so!!Melt the chocolate pieces in a microwaveable bowl until soft and blendable. Add the fat free cream cheese, the cocoa powder and splenda/sweetner and stir until reasonably smooth.On a low speed, using a hand mixer, blend the ingredients until you achieve a uniform-ish color/texture. Then begin conducting extensive taste tests. If the product meets all "factory" based requirements, you may proceed to the next step!(Note: This is also the time for adding any extras that you wish to have be a part of your recipe. I can't take responsibility for the calorie count being accurate if you go adding uber-yummies though, so keep your calories in mind! ; ) )Next Step!!Now that we've achieved uniformity, place the whole bowl into the freezer for 30 - 60 minutes, or until firm enough to form into small, gooey balls.Form into small, gooey balls. Coat your delicious treats in cocoa powder, confectioner's sugar, peanut flour, or any other combination of tasty treats you can think of!Approximately 1/2 to 1 T in size, this recipe should make *around* ten servings.Pack in a small plastic container, in several layers, separated by small sheets of waxed paper, and you're ready to eat!!These do need to be stored in a refrigerator, to keep their shape, and to aid in "keeping" time.
