When smooth, add vanilla, set aside. Combine flour, oats, coconut, oil; mix well. Bring apple juice to boil, stir into oat mixture. Press 1/3 of this mixture into at least 9" square pan. Smooth half date mixture over it, spread half of remaining oat mixture carefully over dates, then cover with rest of date mixture, top with remaining oat mixture, ending with 5 layers. Bake at 350 about 45 minutes or until top is lightly browned.
