1. Preheat oven to 350. 2. Line an 8x8 baking dish or similar size pan with parchment paper. 3. Whisk the coconut flour, almond flour, and 1/4 ONLY of sweetener, reserve the rest 4. Cut the butter or oil into the flour mixture, or use a food processor on pulse until combined 5. Press the mixture onto parchment paper and bake for 10 minutes. 6. While that's cooking, beat the eggs, lime juice, zest, and remaining 3/4 c. Sweetener. If using a food processor for crusted, simply put these in it and pulse until combined. Only takes 2-3 pulses and you'll dirty one less bowl. 7. Pour egg mixture onto crust after it's done and sprinkle with optional coconut. 8. Bake for 15-25 minutes, checking every few after 15 due to variations in pans used. 9.
