Coconut is my favorite but it is high in calories so I worked to reduce the impact in my diet. Sort of the ""have your cake and eat it too" concept . The recipe can be further modified by using splenda instead of gradulated sugar. It works just as well. If you want to make them look festive add 1/4 piece of marachino cherry on top before baking. I make them plain so those few calories were not calculated.

1/2 cup Flour, white
4 Egg whites
1/4 teas salt (non iodine or sea salt)
1 teas pure vanilla (May use almond or vanilla extract)

Note: add 1/4 marichino cherry on top if you prefer.. this adds approximaely 2.5 calories per quarter piece.

Here is how you make Macaroons My Way:

Mix coconut, flour, sugar together in a bowl. Beat egg whites until foamy then add 1/4 teas salt (non iodine or sea salt) continue beating until the soft peak stage gradully add in vanilla. Thoroughly fold in dry ingredients. Drop by teaspoon full onto parchment paper or greased cookie sheet. Bake in 325 degree oven for 20 minutes or until the edges are golden brown.
