Here is how you make Molasses Diamonds:

Mix first 4 ingredients together. Work applesauce and sugar in a bowl until creamy. Add egg whites and beat until well mixed.Stir in soy milk, molasses, and 1/3 of the flour mixture. Mix dates, raisins and walnuts into remaining flour mixture.Add to wet ingredients. Line a cookie sheet with parchment paper. Spread 1/2 of mixture out onto sheet, into rectangle 12x8.Bake in medium low oven at 325, for 10-15 minutes. Cut into diamonds. Bake the rest of the dough the same way.
