1 cup oat bran
1/2 cup wheat bran
1 can diet lemon-lime soda
6 Tbsp Fat Free Sugar Free Jell-o pudding mix, lemon flavor
6 packets HMR 800 Vanilla shake (I believe you can use the 500 or 70+ but best to check -- total calories will change)
1 tsp baking soda
1 tsp baking powder
3 Tbsp sugar substitute (I used raw stevia) *optional


How Do I Make HMR Lemon Muffins?

Here is how you make HMR Lemon Muffins:

Preheat oven to 350 degreesSpray muffin pan with nonstick cooking spray (I learned the hard way that these muffins do not like separating themselves from baking papers ...)In a medium mixing bowl, combine oat bran, wheat bran, and diet soda. Let sit 3-4 minutes for bran to absorb soda (you should not see any liquid once it's good and soaked -- just wet bran).In another bowl, combine shakes, sweetener (optional), jell-o powder, baking soda, and baking powder, until completely incorporated.Add powder mix to wet bran in stages (it will get harder to mix toward the end -- I promise there is enough liquid, but it won't seem like it at first, which is why I recommend stirring in a bit at a time).Fill muffin tin cups about 3/4 full -- this recipe will make 12 muffins. Batter will be sticky. Bake at 350 for 15-20 minutes -- until tops are browned, but not burned. One muffin = 1/2 shake serving. Do not eat more than 4 muffins in any given day. Refrigerate or freeze any not eaten first day.
