1/5 cup quick oats
1 cup dark demerara sugar (brown sugar) OR 2/3 cup dark demerara and 1/3 cup muscovado sugar (moist brown sugar)
1 tsp baking powder OR 1/2 tsp baking soda and 1/2 tsp citric acid
1 pinch salt
1 tsp mahlab or other spices
100 g dried cranberries or other dried fruit
1 cup milk
2 medium eggs
4 tbsp olive oil or other oil
1 thumbsized piece of ginger

1. Preheat oven to 170-180C with ventilator. 2. Prepare a muffin tin and line it with paper or silicon liners. Or oil and flour the nests.3. Put the dry ingredients (flour through cranberries) in a bowl and mix well. If you are using moist brown sugar, use your hands to brake up the chunks.4. In another bowl put all wet ingredients - milk through olive oil.5. Grate the ginger in the wet bowl and whisk with a fork until the egg yolks are relatively beaten. You can add the ginger in the dry bowl too before you mix the dry ingredients.6. Pour the wet ingredients into the dry and mix with a fork until just combined.7.
