Here is how you make Low Carb Vegan Applesauce Oatmeal Muffins:

Soak the oats in milk for one hour. Preheat the oven to 400 degrees. Spray muffin pan with coconut oil spray. Combine the oat mixture with the applesauce and egg whites, and mix until combined. In a separate bowl measure and whisk the dry ingredients together. Add wet ingredients to dry and mix until combined. Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan. Bake for 20-25 minutes or until spongy on top. Remove from pan, and check for doneness by running a toothpick through the center. If it comes out without any batter on it, they're done! These are great for a quick snack, or as a sweet accompaniment to a meal.
