Here is how you make Pumpkin-Spice Mini-Muffins:

Preheat oven to 375.Whisk egg whites in a bowl. Add canned Pumpkin. Gradually stir in the box of Spice Cake. Gradually add water to thin the batter to a muffin-like consistency. I also add a teaspoon of all-spice and a few packets of Truvia but these are optional. Spoon batter by the tablespoon into mini-muffin tins sprayed with non-stick cooking spray. Bake 12-15 minutes or until a toothpick inserted in the middle comes out clean.I managed to make 72 mini-muffins with this recipe by just using a tablespoon of batter per muffin.
