How Do I Make Apricot Cream Pie?

Here is how you make Apricot Cream Pie:

Pre- bake pie shellPut dried apricots in heavy bottom sauce pan.Just cover with water. Put lid on.Simmer carefully (they burn easily) 30 minutes, stir a few times while cooking till relatively smooth. May add small amounts of water toward end to prevent scorching.Add tapioca, cook a few minutes stirring constantly. Will be very thick.Add sugar substitute stir well.Remove from heat, let cool.Prepare topping mix according to directions.Spoon apricot filling into pie shell.Top with whipped topping.If you like toasted coconut or slivered nuts sprinkle on top.
