Drain excess juice off pineapple. Mix raisins and pineapple; set aside. Combine sugar, butter, egg and vanilla in a mixing bowl; beat until fluffy. Stir in raisins and pineapple. Sift flour with baking powder, baking soda and salt. Add to wet ingredients and mix well. Sitr in nuts. Spoon into greased or paper lined muffing tin, filling 1/2 to 2/3 full. Bake at 375 degrees for 20 minutes or until done.Muffins are better the second day after making.
