The ingredients for Pumpkin Bars are:

CRUMBLE:
3/4 c. oats
5/8 c. flour
1/4 c. pecans
1/4 c. packed brown sugar
1/4 tsp. salt
1/4 tsp. baking soda
6 Tbsp. Country Crock (the original recipe calls for real butter, but I used this substitute to cut fat and calories)

FILLING:
1 c. pumpkin puree (NOT pumpkin pie mix)
1/3 c. non-fat milk
2 Tbsp. packed brown sugar
1 egg, whites only (again, to cut fat)
1/2 Tbsp pumpkin pie spice*



*To make your own pumpkin pie spice, combine 1 1/2 tsp. cinnamon, 3/4 tsp ginger, 1/4 tsp nutmeg, and 1/4 tsp allspice. I make a double batch of this at a time and use it all fall and winter long.


How Do I Make Pumpkin Bars?

Here is how you make Pumpkin Bars:

Preheat oven to 375. In a small bowl, combine all the ingredients for the crumble, and mix until...well, crumbly. Everything should be well incorporated. Reserve about a cup for later, and press the remaining mixture into a 9x9 pan. Bake for 10 minutes.While the bottom bakes, mix together the pumpkin, milk, brown sugar, egg white and spice. Beat until smooth, then spread over the hot crust. Top with the reserved crumble mixture -- it won't cover all of it. Bake for another 20-25 minutes. Let it cool completely before cutting.
