Bring two cups of salted water to a boil. Add rice, stir, cover and let simmer over medium-low heat for 15 minutes without removing the lid. There will still be water when 15 minutes is up.Remove from heat and add sugar and plumped raisins.Meanwhile, in a separate small bowl, beat and egg and add your milk and vanilla. Add to rice mixture. Return rice to stove and return to boil over medium-low heat stirring occasionally.
