1 (6oz) or 2 (3oz) packages of apricot jello
1- 8 oz cream cheese (1/3 less fat)
1- 20 oz can crushed pineapple in juice (don't drain)
1/2 cup sugar (I actually used less and will try with half that amount - but didn't want to screw up the recipe here)
1 cup cold water
2 - small or one large can mandarin oranges, drained and chopped
1 - small container of Cool Whip ( I used the Lite)

Here is how you make Anita's Frozen Apricot Jello Salad:

Place the entire can of the crushed pineapple in a sauce pan.Mix in the jelloCut in the cream cheese and stir over medium heat until dissolved. Bring to a boil, then remove from heat.Add the sugar, stir.Add the water, stir and pour into an 8x12 dish and refrigerate until fairly thick.When mixture is slightly thickened add the chopped oranges and fold in the cool whip. Blend well.Refrigerate or freeze - (if freezing, give a couple hours to defrost).Cut into squares - four across and 6 down.For a pretty effect garnish with whole mandarin slices.Number of Servings: 24Recipe submitted by SparkPeople user CALIDREAMER76.
