The ingredients for Joy's Tapioca are:

1/3 cup tapioca pearls (I used multi-coloured)
2 x 400g (0.85pint) cans lite coconut milk
2 eggs
1/4 cup palm sugar
1/2 cup raisins
1/3 cup coconut, shredded and toasted


How Do I Make Joy's Tapioca?

Here is how you make Joy's Tapioca:

Soak the tapioca and raisins in 1 can coconut milk, in a heavy based saucepan for at least 60 min. In a basin mix the eggs, palm sugar and remaining coconut milkAfter the soaking time, add the egg mixture to the tapioca and place saucepan on a medium heatBring to just under boiling point, stirring, and continue stirring at a simmer until the tapioca becomes opaque, and the custard is thickened. This can take about 20 min. Stir in 3/4 shredded coconut Remove pan from heat and turn mixture into a serving dish at once. If it is left in the pan the egg will continue to cook and become curdled.Sprinkle the remaining coconut over the top Serves 6Serving Size:?Serves 6
