Here is how you make Whole Wheat Vegan Vanilla Cupcakes:

Preheat oven to 350F. Line muffin pan with cupcake liners. In a large bowl whisk soy milk and vinegar together and set aside to curdle. In a medium sized bowl sift together flour, cornstarch, baking powder, baking soda and salt and mix. Add oil, sugar and vanilla to the soy milk mixture and beat. Add dry ingredients to the wet and mix until no large lumps. Fill liners two thirds full and bake 20 to 22 minutes.
