The ingredients for Zucchini Ring are:

1 1/2 cups all purpose flour
1 1/2 cups whole wheat flour
3 cups turbinado pure cane sugar
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
2 eggs
1/2 cup egg whites
1/2 cup unsweetened applesauce
4 cups zucchini, cut in 1-inch cubes
1 cup walnuts


How Do I Make Zucchini Ring?

Here is how you make Zucchini Ring:

Sift dry ingredients into large mixer bowl. Put eggs, egg whites, applesauce and zucchini into blender container, cover and process 3 cycles at grind or until finely chopped. Add to dry ingredients, mix with electric mixer until **well mixed**. Stir in walnuts. Pour into well-greased, fluted tube pan. Bake in a preheated 300 degree oven until done, about 1 1/2 hours. Let cool 10 minutes; remove from pan and cool on wire rack. When completely cool, slice into 24 slices.**Be sure to check the sides and bottom of the bowl when mixing, it tends to like to stick and then the dry ingredients will not be mixed in thoroughly.
