1. In a non stick pan or wok on medium heat, add the oil, garlic, and ginger and fry for 1 minute to soften2. Turn up the heat, add Asparagus, Fennel, and carrot and stir fry for another 5 minutes3. Add mushrooms and prawns and fry until prawns turn pink, approx 3 minutes4. Add the oyster sauce, spring onions, and a slurry made from the water and cornflour. Stir to combine.
