1 can black beans, mostly drained
1 can diced tomatoes
1/2 cup onion, diced
1 green pepper, chopped
1/2 cup mozzarella, part-skim
2 tbsp extra virgin olive oil
1 tsp chopped garlic
1/2 tsp basil
1 tsp salt
1/2 tsp black pepper, or to taste


How Do I Make Pop's Black Bean Surprise?

Here is how you make Pop's Black Bean Surprise:

Put olive oil in skillet on medium heat. Add garlic, onions, and green peppers. Saute until tender; onions should be translucent. Remove all from skillet, add sirloin. Cook sirloin thoroughly until no red or pink shows any longer. (You may drain the meat if you're concerned about fat by spooning it out, but the leaner the meat, the less you have to worry.) As soon as the meat is cooked through, add the onions, peppers, and garlic back in. Now add the beans, tomatoes, basil, salt, and pepper. Stir once and cover, turning the heat down to simmer for 5-10 minutes--enough time to heat everything and let the flavors "marry." Stir and serve in bowls, sprinkle each with 1-2 tbsp mozzarella.
