3/4 cup chopped onions
3 tsp garlic
1 cup sliced mushrooms
1 cup chopped zuchini
1 cup chopped spinnach
1 cup black beans
SAUCE
1.5cup tomato sauce
1/4 cup finely chopped onion
2tbsp finely chopped garlic
3tbsp chili powder

6 oz part skim mozzarella

Here is how you make Lentil and Bean "Enchiladas":

Boil the lentils until tender.In a frying pan brown the onions, garlic and mushrooms. Add the zuchini and spinnach and cook until all vegetables are tender. Add in the cooked lentils and beans.In a second pan fry finely chopped onions and garlic until clear. Add in tomato sauce and chili powder. Add 1/4 cup of this mixture to the vegetables.place each tortilla into the tomato sauce until tender. Fill tortillas with lentil/bean mixture, roll and place in an oven safe pan. Cover rolled tortillas in remaining sauce, and shredded mozzarella.
