1 lb. Lean Ground Beef
14 Corn Tortillas
1/2 onion chopped
1/3 C. All Purpose Flour
1/4 tsp. Garlic granules
1/4. tsp Cumin
1/2 tsp Salt
3 Tbs. Shortening
12 tbs. Enchilada Seasoning Mix (include flour and spices)
2 c. Cheddar Cheese, grated
3. C Water


How Do I Make Cheesey Beef Enchiladas?

Here is how you make Cheesey Beef Enchiladas:

Brown ground been and onion , add 1/3. c. flour, garlic granules, salt and cumin , stir and let set. In sauce pan combine shortening and enchilada seasoning, stir well, add 3 c. water. Bring to a boil and let thicken. Let cool slightly. Dip corn tortillas in enchilada sauce and set aside. To assemble, in 9x13 pan, spread 1/2 c. of sauce, roll ground beef up in tortillas and set in pan until all are used. Pour remaining sauce over until nicely covered, you may not use all the sauce or you will end up with soggy enchiladas. Top with 2 c. of cheese. Serves 7 with 2 enchiladas each or 14 with 1.
