Simmer slowly until all liquid has been absorbed, about 30 min. Meanwhile put 1 cup of yogurt in cheesecloth squeeze some of the moisture out the the yogurt. If you have time you can drain it over a cup for several hours and you will have what they call yogo cheese. You don't need it that thick for the tzatziki sauce. When you are done squeezing some of the moisture out of the yogurt, add 1/4 finely diced or grated cucumber, 1 large clove of garlic crushed, 1/2 tsp. salt and 1/4 tsp. ground pepper. Refrigerate until ready to use.Fill each pita pocket half, with1 tablespoon feta cheese, 1 oz. seasoned roast beef, lettuce, onion, and tomatoes.
