2 medium onions, cut into wedges
350g lean braising or stewing steak, cut in chunks or strips
1 medium carrot, cut in chunks or strips
450ml beef or vegetable stock (low-salt or homemade)

Heat oil in a heavy-based casserole dish and add the onions and beef pieces. Fry gently, turning the meat occasionally until it is browned and the onion is beginning to soften. Add the carrot, stock, bouquet garni and black pepper and bring to the boil. Cover and simmer for 1-2 hours, until the meat is tender.When almost ready to serve, remove the bouquet garni and turn up the heat slightly. Remove 2 tbsp of stock and mix to a smooth paste with the cornflour. Add a further few tbsp of stock then return the stock plus cornflour to the pan and cook for 3-5 minutes, stirring gently, until the sauce thickens.
