Add all beef, broth, and diced tomatoes to pot and simmer. Spice as you like - I used thyme, pepper, basil, sale and a splash of bourbon. Simmer beef and broth until beef is tender. Dice all veggies into sizes so they will cook about the same speed, and toss with lemon pepper, balsamic and olive oil. Then spread these evenly in a large roasting pan and broil with pan on middle rack of oven. Toss the veggies every 10 minutes or so to brown but not burn. Check for doneness at about 30 minutes. Veggies should be firm but not hard. Remove from oven. Serve veggies in a bowl with beef and broth over the top.
