1/4 teaspoon black pepper
8 ounces sliced fresh mushrooms
8 sun-dried tomatoes
1 can (14 oz) fat-free, reduced sodium beef broth
6 small potatoes, unpeeled, cut into wedges
1 cup sliced carrot
1 medium onion, chopped
1 Tablespoon corn starch

Combine beef, wine, olive oil, orange peel, garlic, bay leaf, thyme and pepper in a large bowl, soak at least 2 hours or overnight. Place beef mixture in large pan. Add just enough wine to cover beef. Bring mixture to a boil. Cover, reduce heat to low, Simmer 1 hour. Add remaining ingredients, except cornstarch. Cook 20-25 minutes or until vegetables are desired tenderness.
