LIft out the bacon reserving fat in the pan.Season beef with salt and pepper. Sear/brown the beef chunks in the bacon fat. Do this in batches so you don't crowd the beef and can get a good sear on 2-3 sides of the beef pieces. Set aside with slotted spoon to a bowl.Add carrots and onions to rendered fat in pan after cooking all of the beef. Add more olive oil if you don't have enought oil in pan. Cook for 4-5 minutes. Deglaze pan with the beer scraping up all bits on bottom of the pan. Add broth, beef, thyme, garlic and mustard. Bring to a boil, reduce heat to a simmer and cook for 90 minutes.You can simmer on the stove or if your pan is ovenproof you can cook it in the preheated oven for 90 minutes.
