This is adapted from a coworker's recipe. His original recipe calls for a small amount of leeks, 3 stalks of celery and 2 cans of different types of beans, and a cup of cabbage. I've made adjustments here to accommodate my IBS and personal dislike of leeks, subbing in chickpeas and using celery salt, as I dislike the texture of celery. It's pretty simple, and makes for a great batch meal for those of us who work strange hours to portion off.

2 1-litre containers of beef broth or equivalent
1 litre of water
1 large (540ml) can of diced tomatoes, low sodium if possible
2 pounds of cubed stewing beef
4-5 large yellow skinned potatoes (leave skin on if desired), cubed
1 large onion (ideally red for colour), sliced small
5 large carrots, peeled and sliced
14 large mushrooms, sliced
2 cans of chickpeas, drained and rinsed
8 cloves of garlic, minced
fresh basil, fresh thyme to taste
other seasonings as desired (I like a dash of cumin and cayenne)
1/2 teaspoon celery salt or to taste

OPTIONAL:
1/2 cup leeks
1 cup of cabbage, sliced small or green beans
substitute chickpeas with beans of your choice
2 stalks celery, cut small

Here is how you make Colourful Beef Stew:

Makes 12 large bowls/servingsPlace onions, mushrooms, water, garlic (and celery, leeks if using) into a large pot on medium heat to begin softening.While waiting, begin browning beef cubes until cooked almost through.Once done, add beef cubes, broth, can of tomatoes and spices/herbs to pot, slowly bringing to a boil.Add potatoes, carrots, chickpeas (and any other vegetables chosen) to mix.Cover and simmer for 2-3 hours, until beef softens and flavours blend.If desired, thicken with a small amount of tomato sauce, flour or any other desired tricks.Number of Servings: 14Recipe submitted by SparkPeople user SAFEINMYFRAME.
