12 oz stew beef (just grab the pack you want, this doesn't have to be exact by any stretch!)
1 large can Guinness beer
3 red onions
fresh portabella mushrooms (2 of the things prewrapped in the grocery store)
2 cups of shredded cheddar cheese
3 cloves garlic minced (or more to taste)

Here is how you make Joni's Guiness Beef Stew:

Make sure to cook in a pot that can go in the oven covered. Cut all the red onions and cook until carmelized. Add the mushrooms (whole or cut doesn't matter) and beef and cook on med high heat until the meat is brown on all sides. Add the garlic and mix thoroughly and pepper. Cover and put in a 375 oven for 1.5 hours. Put on the stove top and make sure it is as thick as you'd like. More times than not it isn't. Take out some of the broth and add cornstarch to the broth and mix thoroughly and then add to the pot and mix well.
