2 cups fresh spinach
3 garlic cloves minced
4 cups fat free, reduced sodium beef or vegetable broth
2 tbsp olive oil
1 large raw carrot, chopped
2 cans of petite tomatoes, chopped

Here is how you make Lentil Stew with Beef:

Heat a large dutch oven on medium high heat. Add olive oil and then beef. Let beef brown on all sides and remove from pot. Add onion, garlic, celery, oregano, thyme, and carrots and let sweat until onion is translucent. Add spinach. Add canned tomotoes, broth and beef. Let mixture cook for about 30 minutes. Add lentils, stir and reduce heat to low and put lid on pot.
