What Are The Ingredients For Mom's Beef Stroganoff Recipe?The ingredients for Mom's Beef Stroganoff are: 1 lb. beef round steak, trimmed and cut into thin slices (very thin is the key!)1 lb. baby portabella mushrooms, sliced or cut into quarters 1 c. beef stock 12 oz. "good" red wine (what you would drink) 1 c. sour cream (if you want to "slim" this down, you can use reduced fat, but I wouldn't as it doesn't taste the same) 6 servings of no yolks extra wide egg noodles (11/4 c. dry ea. serving) Salt & Pepper to taste How Do I Make Mom's Beef Stroganoff?Here is how you make Mom's Beef Stroganoff: This makes 6 normal sized servings of beef stroganoff or 4 really big servings. We are a family of 4 and we have left overs for the next day, so the servings are really large!Trim all the fat from the round steak and divide it into about 4 or 5 pieces. Take each piece and slice it very thinly. This is key to good stroganoff, in my opinion. The thinner the meat, the more tender it becomes when cooked with the broth and wine. You can take the meat and partially freeze it to get really thin slices without cutting your fingers off!Spray a preheated 12" saute pan with cooking spray and fry the beef in batches so they are all nice and brown. After the meat is all cooked, put the mushrooms in the pan and cook all the water out until they are nice and brown as well. Then add the meat back into the pan, add the beef stock and simmer until it has reduced by 2/3. Add in the wine and reduce by half. When the wine is reduced, make sure your noodles are done. Add in the sour cream and mix thoroughly. Spoon over each serving of noodles and serve. This is great with a small side salad as it is very rich and filling!
