This is a wonderful, lower fat version of beef stroganoff. I found a similar recipe years ago, but I've made several adjustments to make it tastier and healthier. For example, I use oat bran instead of bread crumbs and fat free greek yogurt instead of low fat sour cream. I also prefer fresh mushrooms instead of canned and fresh parsley instead of dried, but you can certainly use what ever you have on hand or adjust it to your taste. Enjoy!

12 lb lean ground turkey (I use Jennie O extra lean)
3/4 cup oat bran
1/3 cup fresh parsley, chopped fine
1/2 tsp. dried tarragon
1/2 tsp. onion powder
1/2 tsp. garlic powder
2 egg whites
3 cups water
4 tsp. beef bouillon granules
1 cup sliced fresh shitake mushrooms
3 1/2 cups uncooked "no yolk" egg noodles
1 cup plain, fat free greek yogurt
1/2 cup green onions or scallions, chopped

Here is how you make Non-beef Skillet Stroganoff:

Combine turkey, pork, and next 5 ingredients (oat bran through egg whites) in a bowl, and stir well. Mixing with clean hands works best! Shape the mixture into 24 (1-inch) meatballs or 48 smaller meatballs. Coat a large nonstick skillet with cooking spray, and place over medium-high heat until hot. Add meatballs, and cook 6-8 minutes, browning on all sides. Drain well. Wipe drippings, if any, from the skillet with a paper towel.Return meatballs to the skillet. Dissolve bouillon granules in the water and add to the meatballs along with the mushrooms; bring to a boil then stir in noodles. Reduce the heat and simmer for about 10 minutes or until the noodles are tender, stirring occasionally. Remove from heat; stir in sour cream.
