Whisk together the oil, thyme, vinegar and season with salt and pepper. Drizzle the mixture over the vegetables, then toss to coat. Roast in the hot oven for about 25 minutes, until tender, turning once or twice. Meanwhile, mix together the beef, onion, garlic, chillies, ketchup and egg and season with salt and pepper. Shape the mixture into 4 patties. About 10 minutes before the vegetables are cooked, preheat the grill and cook the patties for 5-6 minutes on each side until browned and cooked through.
