1/4 cup fresh red peppers, minced

1 medium stalk celery, diced small
1 tsp. white pepper
2-3 slices of French Bread, processed into bread crumbs, divided into 1/2 cup in mix, and remainder for breading.

Mix all ingredients, taking care to remove any shells in crab, use 1/2 cup breadcrumbs in mix, reserving remainder in pan to use to bread crab cakes. Divide into six parts, and roll in bread crumbs, flattening to 1/2 inch thick. Chill thoroughly (or freeze 40 minutes). Preheat broiler, and spray pan with Pam.
