1 1/2 c diced zucchini
1 small red pepper diced
1 tsp canola
garlic powder
1 1/2 lbs boneless skinless chicken breast
2 T parmesan and regiano
italian or tuscan seasoning to taste
1 10 oz rotel
4 oz fresh mushrooms diced
1 oz white wine
1/2 c low sodium chicken broth
salt and pepper to taste


How Do I Make Parmesan Chicken with Tortellini and Veggies?

Here is how you make Parmesan Chicken with Tortellini and Veggies:

Pound chicken pieces to even thickness. Sprinkle with tuscan seasoning on both sides and rub in. Cook tortellini just until they float and drain. Meanwhile, put zucchini and red peppers on baking sheet, drizzle with oil and season with garlic powder, salt and pepper. Bake at 400? for 10 - 15 minutes til al dente. Meanwhile, coat chicken with parmesan/regiano cheese, pressing it in. Heat a non stick skillet to med and add chicken in batches. Brown on both sides. As they get done, put in the oven on the baking sheet with veggies. After chicken is out of the pan, add white wine and simmer for a minute. Add chicken broth, veggies and remaining ingredients (except chicken) and simmer for 15 minutes. While simmering, pull out chicken if done and cover with foil to rest.
