1-1/2 pounds boneless/skinless chicken breasts

Here is how you make Jerk Chicken, Rice and "Peas":

1) Heat oven to 450. Coat a baking dish with nonstick cooking spray.2) Cook rice following package directions, substituting water with chicken broth, and adding 1 tsp. jerk seasoning. Gently stir in beans during the last five minutes of cooking.3) While rice is cooking, heat oil in a small skillet. Saute onion until tender.4) Cut the chicken into 1-inch pieces and toss with remaining 3 tsp of jerk seasoning.
