Preheat oven to 375 degrees.Spray baking dish with cooking spray. Pour uncooked rice into bottom of pan, reserving seasoning. Add chicken breasts. Combine water and lemon juice and pour into pan. Arrange onions, peppers and mushrooms over and around chicken.
