2 T. Olive Oil
1 Sweet Onion, chopped
1/2 C white mushrooms, sliced
1 C Chianti Wine
1/2 C Chicken Stock
1 T Balsamic Vinegar
1 t parsley, chopped
2 T Pesto
1/4 C sugar
1/2 C red grapes, cut in half
1 T. flour (optional- for thickening)
2-4 Chicken breasts
Linguini


How Do I Make Chianti Chicken?

Here is how you make Chianti Chicken:

Saute onions in olive oil until soft. Add sliced mushrooms and saute for 2 minutes. Add wine, stock, vinegar, parsley, pesto & sugar and bring to a boil. Reduce to simmer and add red grapes. Stir occasionally until reduced. Add flour to 1/4 cup water and whisk into sauce for thickening. Grill Chicken breasts. When done, place into the sauce and let simmer 3-5 minutes per side.
