In a large skillet heat the canola oil over medium-high heat. Flour both sides of the chicken breast cutlets. And sautee in the oil until both sides are golden - about 2-3 minutes per side.Remove skillet from heat. And remove the chicken breasts to a plate. Deglaze the skillet with vodka off the heat. Scrapping up any brown bits from the bottom of the pan. Return skillet to heat and boil off most of the vodka.Add the chicken broth and lemon juice to the skillet.Return the chicken breasts to the skillet and cover. Allow to simmer until broth has cooked down and started to thicken - about 10 minutes.Stir in cream. And top with tomatoes.
