Here is how you make Lite and Easy Chicken and Vegetable Alfredo:

Prepare spagetti noodles per package directions and cook until just tender. Drain, do not rinse. (Pasta cooker works best for this)Meanwhile, place neufchatel, milk, garlic, parmesan, pepper and salt into a blender or food processor and blend until smooth. Set aside.Lightly salt and pepper chicken breast on both sides. Heat non-stick skillet over medium heat and saute' chicken in 1 TB olive oil till nicely brown on both sides. Remove chicken and set aside. Pour neufchatel mixture into skillet, stirring frequently, until mixture begins to bubble, reduce heat and let simmer, stirring often, until thickened, about 10 minutes. Meanwhile, chop chicken into bite-size chunks. When sauce is thickened, add chicken, chopped red bell pepper, peas and chives. Simmer over medium low heat until vegetables are tender.
