Chili powder, 1 tbsp
Hot Chili Peppers, 1 pepper diced finely
Salt, 1 dash
Tomato Paste, 0.5 cup
Olive Oil, 3 tbsp

How Do I Make Beth's Vegetarian Chili?

Here is how you make Beth's Vegetarian Chili:

Heat oil in a heavy pan on medium-high heat and add the chili pepper, leek, and onion and cook until the onions are slightly soft. Add the mushrooms and the cumin seeds and cook for a few minutes. Now add the fresh tomatoes and cook for another few minutes. Add the can of tomatoes and all of the beans along with the chili powder, tomato paste and salt. Cook for ten minutes and then add the chopped fresh coriander. Serve and enjoy!Makes six 10oz servings.You can also add dried smoked peppers, Mexican rub spice, and powdered cumin.
