1 cup White Kidney Beans
2 cans No Salt Added Canned Tomatoes
1 can Diced Tomatoes
About 1/2 cup Sliced Mushrooms
About 1/2 cup Chopped Zucchini
About 1/2 cup Diced Onion
About 1/2 cup each Diced Green and Red Bell Peppers
1 Diced Hot Red Pepper (more or less to taste)
2 cloves Chopped Fresh Garlic (more or less to taste)
Chili Powder to Taste


How Do I Make Hot Veggie Chili?

Here is how you make Hot Veggie Chili:

Chop up all of the veggies and garlic and cook until softened, then place in a large pot. Add the beans and canned tomatoes. If the unsalted tomatoes are whole, just pulse them in the blender until more or less choppily pureed. When this is hot, add the chili powder until it is hot enough for your personal taste. I usually use lots. Leave to simmer as long as you have time for. Alternatively, place in the slow cooker for a few hours.This makes about 6 servings.
