6 oz pork tenderlion, sliced
2 Carrots, sliced
1 cup of freshly chopped Parsley
1 tsp, Virgin Coconut Oil
1/2 tsp Curry powder
3 cups of fresh spinach
1/2 Cup of Yogurt, plain, low fat
2 servings of Plain dry couscous
1 cup of homemade chicken broth
1/2 Cucumber (half peeled), quartered
2 Red Ripe Tomatoes, quartered
4 large Radishes, sliced
1 tbsp Balsamic Vinegar,
1 tbsp Dill weed, dried
2 whole wheat pitas, warmed in toaster, cut into quarters

Here is how you make Medi Dinner Platter:

Prep bell peppers, carrots and pork while heating skillet to medium heat, add coconut oil. Add meat to skillet and brown.Place one cup of chicken broth in a small pot and bring to a boil; add dry couscous and cover allowing them to steam.Once the pork has browned on the outside add peppers, carrots, snap peas, and curry powder. Saut? on medium heat, stirring occasionally until the color turns bright then add spinach and 3/4 of a cup of fresh parsley. Remove from heat after 10-20 seconds, do not over cook the spinach. Prepare cucumber, tomatoes, radishes and 1/4 cup of fresh minced parsley put in a metal mixing bowl. Add balsamic vinegar and dill weed and refrigerate for 20 minutes. On a large serving platter, place couscous, cucumber salad and the saute with 1/4 cup of yogurt on either side of the platter.
