This is my go-to recipe when I haven't planned a menu and I'm out of ideas, also good for when anyone's had a particularly tough day -- very comforting. I try to always keep frozen ground turkey and frozen spinach in my freezer, just in case. Any ground meat will do. You can add more or less milk depending on how gravy-y you want it. To be truly one-pan, serve it with whole grain toast. I usually serve it with instant mashed potatoes (Honest Earth Chunky Yukon Gold is my current favorite brand). I also sometimes make it without the spinach if I can get my husband to make a salad. (With the spinach the recipe's alternate name could be "Green Gravy.")

1 tbsp olive oil
1 or 1-1/2 lbs ground turkey (or any ground meat)
1 med onion, chopped fine
1 tbsp garlic powder
1/4 cup flour (I use Wondra whenever I make gravy)
2-1/2 cups 2% milk
16 oz frozen chopped spinach
salt & pepper to taste


How Do I Make One-Pan No-Think Dinner?

Here is how you make One-Pan No-Think Dinner:

Heat oil over medium heat. Add onion. Cook until beginning to be translucent, about 5 minutes. Add ground turkey. Cook, stirring frequently, breaking up clumps with a spoon until thoroughly cooked (no pink) about 8 minutes. Dust with garlic powder. Sprinkle flour over all and cook, stirring, to remove "raw" flavor from flour, about 2 minutes. Very gradually add milk, about a cup at a time stirring well between each addition. It will begin to thicken. (if not, add more flour, one tbsp at a time till desired results achieved.) Reduce heat to low and let simmer for a few minutes. Meanwhile put spinach into a microwave-safe bowl and defrost according to your microwave's instructions. Drain liquid from spinach. Add spinach to ground turkey.
