Turn your slowcooker on highPut ingredients in the slow cooker in the following order:Frozen chicken breastsBlack BeansCornTaco SeasoningRotelCream Cheese (just put the whole packet in! don't worry about spreading it!)Cook for 4-8 hours on HIGH heat, until chicken is tender and fully cooked.Stir, then leave the lid off and let 1/2 of the liquid cook down.In a large mixing bowl, or with a stand mixer, blend the ingredients as best you can.Make or open your enchilada sauce and pour half into the bottom of a glass pan to coat.Wrap about 3/4 of a cup of the chicken mixture in a tortilla tightly. Place in pan with ends down.
