Sprinkle with the Goya seasoning. Add in all other ingredients except cheese and mix well so everything is evenly distributed. Set your shells in a baking pan and fill them with your combined ingredients evenly. Add Cheese into each shell, just a sprinkle. Close shells up, drizzle top of shells with enchilada sauce and sprinkle remaining cheese on top.
