Here is how you make Kelly's Halibut Olympia:

Rinse and dry Halibut and place in a lightly greased casserole dish, sprinkle with salt and pepper. Mix sour cream, mayo, juice from lemon, 1/8t white pepper and dill seasoning together and set aside. Carmelize sliced onion in 2T butter and add minced garlic just at the end. Pour this mixture over the Halibut and then cover with spinach leaves. Pour sour cream mixture over everything.
