2 small zucchini sliced
1/2 lb. crimini mushrooms sliced
8 oz. lowfat cottage cheese
4 oz. shredded Asiago
2 oz. grated parmesan
1 small yellow bell pepper diced
5 cloves garlic pressed
1 clove garlic whole and skinned
3 cups (1 jar) prepared marinara
No-cook lasagna noodles
Italian seasoning
Salt
Pepper


How Do I Make Bison Lasagna?

Here is how you make Bison Lasagna:

Brown the bison in the olive oil. As it is finishing browning, add the pressed garlic, 1/2 tsp. salt, 1/4 tsp pepper, and 1 tsp. italian seasoning and remove promptly from the heat. Saute the onions and peppers together until the onions are golden brown. In a food processor, place whole garlic clove, 1 tsp italian seasoning, and cottage cheese, blend until smooth.Pour 1/2 cup sauce in the bottom of a rectangular baking dish. Cover with a single layer of noodles. Spoon 1/3 of the cottage cheese mixture over noodles, spread evenly. Top with 1/3 of the remaining ingredients in the order of: zucchini, buffalo, onions, mushrooms, sauce, cheese. Put down another layer of noodles and repeat until all ingredients are used. Tightly cover and bake at 350 degrees for 1 1/2 hours. Check periodically to make sure it is not drying out. If it is add a little water to the dish.
