zest & juice from 1 lemon
2 eggs
cooking liquid from vegetables

Here is how you make Lamb and Lemon:

Cut carrots and celery into 1/2-inch thick slices. Peel and cut potatoes into 3/4-inch cubes. Pulse wheat bread in food processor until it is fine crumbs. Toast in oven until medium brown. Break up with a fork, then transfer to medium bowl. Lightly beat egg; mix in with bread crumbs, onion, parsley, salt, & pepper. Add ground lamb and mix well. Form into 32 meatballs. Spread flour on plate; roll each ball in flour.Place vegetables in wide saucepan along with leek, salt and water; bring to boil. Cover and reduce heat to medium; simmer for 10 minutes.Meanwhile, in nonstick skillet, heat oil over medium-high heat and brown meatballs.Add meatballs to vegetables; simmer, covered, for 20 minutes. Remove with slotted spoon when cooked through.While meatballs are simmering whisk eggs with lemon juice & zest; whisk in the cooking liquid after removing meatballs & veggies.
