Here is how you make Enchilada Meat Loaf:

Preheat oven to 350. Combine first 6 ingredients in a large bowl: add meat mix well. Shape into a ball, place in 9-inch pie plate, flatten to a 6-inch circle: set aside. Make muffin mix according to package. Spread muffin mixture over meat mixture. Bake 50 min or until thermometer reads 160. Remove from oven halve the cheese place on top of muffin mixture cover looses for 10 min. the serve with additional salsa if desired.
